Dinners from the Deli: Chicken Enchiladas with Roasted Tomatillo Salsa

P9300032Rotisserie chickens are a great base to many meals – salads, sandwiches, wraps, pastas and more. I didnt think it was right to leave out the trusty rotisserie chicken in this week’s Dinners from the Deli series. This recipe shows the variety of meals you can put together with ingredients from the deli. I used Tyler Florence’s Ultimate Chicken Enchiladas recipe with a simple and easy roasted tomatillo salsa. This is easy enough to put together at a moments notice – and nice enough to serve to guests. Of course, there are tons of chicken enchilada recipes out there so I advise you pick one that looks tasty to you. I find tomatilla salsa an aquired taste as it can be a bit sour.

I made this for an impromptu al fresco meal last night with my friend Andrew. We ate outside so Winston could join us and wear himself out before bedtime. Double success – good meal and tired dog.
